BLT (Bacon, Lettuce, and Tomato)

8 slices bread, toasted
1 lb. bacon
1 head lettuce (leaves, rinsed)
1 tomato, sliced
4 teaspoons mayonnaise
PAM® Non-Stick Cooking Spray

Equipment needed:
Metal cooling rack
Aluminum sheet pan

Preheat oven to 400°F. Place a cooling rack on top of a sheet pan and spray lightly with non-stick cooking spray.  Place bacon on top of a cooling rack. Cook for 15 to 20 minutes at 400°F or until bacon is golden brown and done to the desired crispness. Lightly spread mayonnaise on two slices of bread.  Place 3 slices of bacon, a tomato slice and a couple of lettuce leaves on one of the slices of bread.  Top with the other slice of bread and cut diagonally. Repeat 3 more times. Serve immediately.  Makes 4 sandwiches
