French Toast

8 to 12 slices of white bread
4 large eggs
½ cup milk
¼ teaspoon salt
¼ teaspoon vanilla
vegetable oil
maple syrup

Equipment needed:
Whisk or dinner fork
Non-stick fry pan
Plastic spatula

Crack eggs one at a time and place contents in a large bowl. Remove any eggshell fragments from the bowl. Add milk, salt, and vanilla to bowl and beat with a whisk or dinner fork until thoroughly mixed and frothy.  Place 2 tablespoons of vegetable oil and a pat of butter in a non-stick frying pan under medium-low heat.  While the butter melts quickly dip one slice of the bread in the egg mixture, then flip it over so both sides are fully coated.  Place coated bread in the frying pan and repeat (two slices should fit nicely in an average fry pan). Sautee both sides of French toast until golden brown. Immediately remove from heat and serve.  (To serve all portions at the same time place cooked French toast on a serving plate and lightly butter individual slices as you complete them. Place a piece of tented aluminum foil over French toast to keep it warm until ready to serve.)

Try using cinnamon bread or adding cinnamon and sugar to the egg mixture.
