Apple Cinnamon Muffins

2 ¾ cups all-purpose flour
2 large eggs
1 ½ cups baked or sautéed apples (or apple sauce)
½ cup brown sugar
1 stick butter
2 teaspoons cinnamon
1 ½ teaspoons baking powder
½ teaspoon baking soda

Equipment needed:
Non-stick muffin pan

Preheat oven to 350°F. Spray muffin pan with non-stick cooking spray. Cream sugar, butter, and cinnamon in a bowl, then add apples and eggs one at a time to the mixture, and stir until fully combined. In a separate bowl, sift together flour, baking soda, and baking powder. Slowly add dry ingredients to sugar, apple and egg mixture and beat until fully combined. Pour batter into a muffin pan and bake for thirty-five minutes or until a toothpick comes out clean.
