Banana Nut Bread

2 ¾ cups all-purpose flour
2 large eggs
1 ½ cups mashed ripe banana
½ cup chopped pecans
½ cup sugar
1 stick butter
1 ½ teaspoons baking powder
½ teaspoon baking soda

Equipment needed:
9” x 5” loaf pan

Preheat oven to 350°F. Coat 9” x 5” loaf pan with non-stick cooking spray and dust with 1 teaspoon of flour. Cream sugar and butter together. Add eggs one at a time and stir (or mix with a mixer) until fully combined. In a separate bowl, sift together flour, baking soda and baking powder. Slowly add dry ingredients and mashed bananas to creamed sugar and eggs mixture and beat until fully combined. Dredge pecans in one teaspoon of flour then fold into batter. (Adding flour to the chopped pecans will prevent the nuts from sinking to the bottom of the pan.) Pour batter into loaf pan and bake for one hour or until a toothpick comes out clean.

Makes great muffins too!  Use a muffin pan instead of a loaf pan and check muffins after 35 minutes for doneness.
