Cilantro Lime Chicken

2 or 3 boneless skinless chicken breasts
½ cup lime juice, freshly squeezed (approximately 4 limes)
½ cup chopped cilantro
½ cup extra virgin olive oil
½ teaspoon salt
½ teaspoon black pepper

Rinse chicken.  Place chicken, lime juice, olive oil, chopped cilantro, salt and pepper in a 1-gallon-size Glad® Zipper Bag. Evenly distribute ingredients and marinate chicken for a ½ hour. Remove chicken from marinade. Salt and pepper each side of chicken before placing on George Foreman grill or roasting in an oven at 400°F for 20 minutes or until is chicken thoroughly cooked through (firm to the touch, golden brown, clear juices). May also be grilled outdoors or sautéed. Dispose of remaining marinade.

Put an additional ½ to ¾ cup of lime juice aside to make Frozen Key Lime Pie recipe if desired.
