Jalapeno Cornbread

Ingredients:
1 package of Jiffy® Corn Bread Mix
1 jalapeno finely chopped (To reduce heat remove seeds and inner membrane)
1 large egg
1 cup defrosted frozen corn
PAM® Non-Stick Cooking Spray

Equipment needed:
9”x9” glass baking dish or muffin tin

Directions:
Spray baking dish/muffin pan with non-stick cooking spray. Place cornbread mix, jalapeno, egg, and corn in a bowl. Fold ingredients together until they are thoroughly incorporated. Do not over mix.  Allow mixture to stand for five minutes before pouring into baking dish/muffin tin.  Cook according to package directions until a toothpick comes out cleanly.
