Jalapeno Mashed Potatoes with Cheddar Cheese

6 potatoes
2 jalapeno peppers
8 oz. cheddar cheese
½ stick butter
½ cup milk
½ teaspoon salt
½ teaspoon black pepper

Equipment needed:
Dutch oven or stockpot

Peel and rinse potatoes.  Cut into uniform pieces and place in a Dutch oven with both jalapeno peppers. Fill a pot with water just covering potatoes. Bring to boil and cook for 20 minutes or until potatoes are fork-tender. Remove jalapeno peppers. (For milder potatoes remove seeds and inner membrane from jalapenos). Drain potatoes and place them back into the pot. Add butter, milk, and jalapenos back into pot and mash until all lumps disappear.  Fold in cheddar cheese.  Serve.

To serve at a party put jalapeno mashed potatoes in a casserole dish and top with an additional layer of cheddar cheese. Place in oven at 325°F for 15-20 minutes or until the cheddar cheese is melted.
