Honey Mustard Chicken

2 or 3 chicken breasts
½ cup honey
½ cup Grey Poupon® Dijon Mustard
1 small onion, sliced
1-pint button mushroom, sliced
2 tablespoons olive oil
½ teaspoon salt
¼ teaspoon black pepper

Equipment needed:
Frying pan

Rinse and drain chicken. Blot dry with a paper towel. Place chicken breasts in a large zip lock bag and beat with a rubber mallet or frying pan to flatten. Place oil in frying pan over medium-high heat. Place chicken in frying pan and season with salt and pepper. Pan fry chicken on both sides until golden brown and chicken is cooked through. Remove chicken from frying pan and place on a serving plate. Tent with aluminum foil and allow to rest for 10 minutes. Add more olive oil to the frying pan and sauté mushrooms and onion until caramelized. Add mustard and honey.  Pour warm honey mustard sauce and vegetables over chicken. Serve.

Pairs beautifully with rice pilaf and steamed broccoli.
