Sautéed Broccoli with Garlic

Ingredients:
2 bunches of broccoli, including stems
2 cloves garlic, finely minced
2 tablespoons extra virgin olive oil
2 tablespoons butter
½ teaspoon salt
¼ teaspoon black pepper

Equipment needed:
Non-stick frying pan
Large bowl of ice water
Dutch oven or stockpot with boiling water

Directions:
Rinse and drain broccoli.  Cut florets into bite-size pieces. Peel and thinly slice stems. Put broccoli in boiling water for 1 to 2 minutes or until broccoli turns bright green.  Immediately remove the broccoli from the boiling water and place in an ice bath to keep the green color.  Drain broccoli.  In a frying pan melt butter and heat oil under medium-high heat.  Add garlic to the frying pan and warm through for a minute before adding broccoli.  Sautee broccoli until warmed through about 5 minutes. Serve warm.
