Ingredients:
1 lb. fresh spinach
2 cloves garlic, finely minced
2 tablespoons olive oil
2 tablespoons butter
½ teaspoon salt
¼ teaspoon black pepper
Equipment needed:
Non-stick frying pan
Directions:
Rinse and drain spinach. In a frying pan melt butter and heat oil under medium-high heat. Add garlic to the frying pan and warm through for a minute before adding spinach. It may seem like too much spinach to fit in the frying pan at first, but the spinach will drastically reduce in size once it wilts. Sautee spinach until warmed through about 5 minutes. Serve warm.
