Spinach Casserole

2 (10 oz.) packages frozen spinach, thawed and drained
16 oz. sharp cheddar cheese, grated
16 oz. cottage cheese or ricotta cheese
6 eggs, beaten
1 onion, chopped
2 garlic cloves, minced
6 tablespoons butter, melted
2 tablespoons extra virgin olive oil
2 tablespoons all-purpose flour
PAM® Non-Stick Cooking Spray
½ teaspoon salt
½ teaspoon black pepper

Preheat oven to 350°F. Lightly grease a 13” x 9” casserole dish with non-stick cooking spray. Drain spinach. Sautee onion and garlic in olive oil until onions are translucent. In a large bowl mix spinach, eggs, cottage cheese, cheddar cheese, melted butter, flour, sautéed onions, and garlic until ingredients are fully combined. Season with salt and pepper. Pour mixture into a glass casserole dish and bake for 1 hour at 350°F.
